sweet + salty cucumber salad
Ingredients:
5 baby cucumbers
1/2 tsp salt
1/2 tbsp sesame oil
3/4 tbsp light soy sauce
1 tbsp Skratch Cucumber + Lime Sport Drink Mix
3/4 tbsp rice vinegar
1 tbsp chili oil
1/2 tbsp sesame seeds
Directions:
Slice cucumbers at an angle so the slices are long and oval-shaped.
Transfer cucumber slices to a bowl and sprinkle with 1/2 tsp salt to draw out the water, otherwise known as a process called "sweating". Mix the salt and cucumber until evenly coated, then place in the fridge for 15-20 minutes.
Prepare the dressing by mixing sesame oil, soy sauce, Skratch Cucumber Lime Sport Drink Mix, rice vinegar, chili oil and sesame seeds in a small bowl.
Remove the bowl of cucumber from the fridge, drain the excess water and pat dry. Pour the dressing over the cucumber and mix well until evenly coated.
Enjoy straight from the bowl as a snack or atop your favorite meal for a sweet + salty burst of flavor!
