Farmers' Market Corn Salad

This corn dish is a great side to accompany all types of meals. It can be served with a variety of meals like burgers, savory breakfasts, and tacos.

Summer is the best time to make this as the ingredients are easy to find at your local farmers’ market.

Buying locally has many benefits including: being picked at peak times, shorter time between harvest and your table, and helping support farm and open space land in your community.

For every 5 ears of corn, 1 basket of cherry tomatoes.

Heat pan on medium heat and sauté tomatoes and corn in olive oil until corn is tender.

Add torn basil to your liking.

Sprinkle with salt, lemon juice, and chili powder to taste.

Bulk it up by adding some diced avocado.
